Rice and beef stew recipe
Rice and beef stew, as well as other types of stews, are a popular winter family dinner (or lunch) in Uruguay. This stew is thicker than others such
as those made with beans or lentils.
For this rice and beef stew recipe you will need: 2 cups of rice, 1/2 kg of beef, 1 onion, garlic, 2 potatoes, 2 carrots, 1/2 liter tomato sauce or 1 kg chopped tomatoes, a piece of bacon (about 300 grams), oil, salt, and pepper (if you wish).
How to prepare this stew?
You should start by putting some oil, the bacon and the beef cut in small cubes, chopped garlic, and the onion cut in small pieces, in a saucepan and cook it until the garlic looks golden.
Then, add the tomato sauce or chopped tomatoes, some water, salt, the carrots cut in small pieces, the potatoes in small cubes, and the rice (you should add more water if necessary while the rice cooks). Cook until the rice is done and the tomato sauce is almost completely absorbed (this dish shouldn't be too juicy).
