Beans stew, along with other types of stew, is a very popular winter dish in Uruguay. There are several different ways to prepare a beans stew, here we will share one of the basics, to which you might be able to add other ingredients if you wish.
A basic
For this basic beans stew you will need the following ingredients: beans (about 200 or 250 grams), tomato sauce or chopped natural tomatoes (1/2 kg), 1 onion, garlic, chorizo (about 300 or 350 grams), bacon (a piece of about 200 grams), oil, salt.
How to prepare it:
Put the beans in a bowl with water and let them rest there for several hours (all night would be great). If possible, change the water once or twice. Then, cook them in water with salt until they are almost done and put them apart for later.
Next, put some oil, the chopped garlic and onion in a big saucepan and cook them until the onion starts looking transparent. Then add the bacon (cut in small cubes) and the chorizo (cut in small pieces of no more than 1 cm) and cook for about 2 or 3 minutes. Then, add the tomato sauce or chopped tomatoes with a bit of water, along with the beans and salt, and cook for about 15 minutes. When is done, turn the fire off and wait about 5 minutes before serving.
